Treat of the Week: Blueberry Lemonade Popsicles

Ok. So our spring/summer transition lasted one weekend. It is already blistering hot here and we have begun our 100+ degree days. I won’t try to hide it… summer is my least favorite season. For me, the cons stomp all over the pros.
I often find myself retreating to my home and looking for ways to beat the heat. That’s what led me to today’s Treat of the Week. We picked up some blueberries at the market and went on a popsicle making mission. This recipe was wonderful because it is so sweet and tart at once.
If you like this recipe, do try some others. Popsicles are a terrific way to celebrate summer while you sweat it out. For now, the boys are out of school and ready for the pool. Mom and I? We’re just trying to stay cool.

Before you start:
This will make more simple syrup and puree than you need for one batch. Store the remainder in the refrigerator for more pops or make blueberry lemonade.
The simple syrup is good to have around for other things… like sweetening iced tea.
Be sure to leave a little space at the top of the mold. Popsicles tend to ‘grow’ a little in the process.
For our molds we used tall shot glasses. In case you are not using conventional popsicle molds, here is how we made it happen:
- Fill the glass and cover in plastic wrap.
- Cut the handle off of plastic spoons (we used wire cutters)
- Wrap a rubber band around the ‘popsicle stick’ about halfway down.
- Cut a small slit in the top of the plastic wrap.
- Insert the stick until the rubber band sits atop the plastic wrap.
The ingredients:
- 4 tablespoons simple syrup (made from 1 cup sugar and 1 cup water)
- 4 tablespoons blueberry puree (made from 2 cups blueberries, fresh or frozen)
- ¼ cup freshly squeezed lemon juice
- 1 cup water
The method:
- Prepare the simple syrup by heating the sugar and one cup of water in a small saucepan over medium heat until completely dissolved. Allow it to cool slightly before transferring to the refrigerator to chill completely.
- With a food processor or blender, puree blueberries. Place in refrigerator to chill completely.
- When the ingredients are chilled, whisk simple syrup, puree, juice, and water together in a bowl.
- Pour the mixture into popsicle molds.
- Insert sticks and place in freezer until completely frozen.
